An Asian-inspired food cart offering a creative menu of rice bowls, dumplings, and other dishes.  Mantis Kitchen is happily tucked into the Sherman Courtyard at 1st and G behind the Velveteen in historic downtown Salida, CO. We are excited to start regular business hours to serve food to our community in a beautiful, shaded, convenient downtown location. Look for us serving weekday lunches, weekend dinners and late night food, as well as a bustling fun BRUNCH on Sundays! We will also be at the Farmers Market in Alpine park on Saturdays from 8-12 with freshly made breakfast sandwiches, cookies, scones, granola, and refreshing drinks.
